Ingredients of Tiramisu

  1. It's 500 gr of mascarpone.
  2. You need 250/300 ml of café FROID.
  3. You need 6 of oeufs.
  4. Prepare 40 gr of sucre.
  5. It's 30 gr of sucre glace.
  6. You need 2 of CàS de cacao non sucré.
  7. Prepare 1 of pincée de sel.

Tiramisu instructions

  1. Sortir le mascarpone et les œufs du frigo 1h avant pour que tous les ingrédients soient tous à la même température. Séparer les blancs des jaunes d’œufs.
  2. Ajouter le sucre aux jaunes d’œufs jusqu’à que ça double de volume et que ce soit mousseux.
  3. Ajouter le mascarpone petit à petit jusqu’à obtenir une crème bien lisse.
  4. Monter les blanc en neige avec la pincée de sel. Lorsqu’ils commencent à mousser, ajouter le sucre glace et terminer à battre jusqu’à que ce soient bien ferme.
  5. Ajouter 1 CàS de blanc en neige au mélange mascarpone et fouetter énergiquement afin d’incorporer plus facilement le reste des blancs..
  6. Incorporer le reste des blancs en neige en 3/4 fois délicatement à l’aide d’une maryse.
  7. Dans un plat, disposer les biscuits à la cuillère préalablement trempés dans le café. Attention à ne pas trop les tremper, un aller-retour suffit.
  8. Étaler sur les biscuits la moitié de la crème mascarpone.
  9. Saupoudrer de cacao non sucré.
  10. Renouveler l’étape en mettant des biscuits préalablement trempés dans le café puis le reste de crème mascarpone.
  11. Pour finir saupoudrer de cacao non sucré puis mettre au frais 5h minimum.
